Is there a way to disable stacks for certain notes?

There isn't an easy way to do it for specific objects, but you can change your stack leniency setting for the whole map in the song setup window
lower stack leniency = objects have to be closer together in time to stack.
higher = a bigger time range where objects would stack
so you could use lower stack leniency for objects to stack less frequently, and then manually position what you want/need to be stacked to look like stacks
